These keto vegan grits will scratch that itch for a hot bowl of Cheesy, Southern Style goodness! And all without Cornmeal, Cauliflower or Carbs!

- 4 tablespoons unsalted vegan butter
- 1 cup lupin meal
- 2 cups water
- 1 cup Silk heavy whipping cream
- 1 teaspoon Himalayan pink salt
- 1 oz Tofutti Better Than Cream Cheese
- 1 cup Violife Epic Mature cheddar cheese (shredded)
Instructions
- Melt butter in a 1-2 Quart Pan.
- Add lupin meal, water, silk heavy cream and salt. Stir briefly to combine. Bring to a boil on medium heat. Once boiling, continue cooking for another 3-5 minutes or until lupin grits have thickened.
- Remove from heat. Stir in Tofutti cream cheese and Violife cheddar cheese into the grits until combined.
Notes
VARIATIONS
- Add diced Jalapeńos into the melted butter.
- Add diced vegan bacon into the melted butter.
- Garnish with chives, scallions or different types of cheese like grated Violife Parmesan.
