- 28 oz Can of Hunt’s Fire Roasted Diced Tomatoes
- 1 tbsp Chosen Foods Avocado Oil
- 1/2 tsp freshly ground pepper
- 4 cloves garlic (minced)
- 12 ounces zucchini, chopped (about 1 medium)
- 1.5 teaspoons of Vegetarian Better Than Bouillon No Chicken Base
- 32 oz water
- 1/2 cup loosely packed fresh basil leaves
- 1/2 cup Silk Dairy-Free Heavy Whipping Cream Alternative
- 2 ounces freshly grated Violife Vegan Parmesan
Instructions
- Simmer Zucchini: Sauté the garlic, zucchini and ground pepper in a tablespoon of avocado oil
- Make Chicken Base: Mix 1.5 teaspoons of Vegetarian Better Than Bouillon No Chicken Base with 4 cups of filtered water
- Simmer Zucchini: Stir in can of Fire Roasted Tomatoes and pour over zucchini. Bring to a simmer and cook for 10 minutes or until zucchini is tender. Add Basil in the last 2 minutes and allow to wilt.
- Blend Soup: Using a submersion blender, blend soup until smooth. Add Heavy Cream and Parmesan Cheese and stir until melted and combined. Adjust seasoning to taste and serve with Keto Vegan Classic Grilled Cheese! (recipe here)
